Ferner Fuel: Banana Oatmeal Zappers
Ferner Kitchen creations. We call these Zappers in our house. I am excited to share them with you!
These Zappers consist of oatmeal, flaxseed, honey, Greek yogurt, banana, egg, cinnamon, nutmeg, chocolate chips, craisins, walnuts. Choose your own adventure!
These are easy to make and they freeze well. They’ve been a perfect ‘grab and go play’ before early morning hockey practices, in between games and tournaments, as well as fuel for just some good old outside fun.
Banana Oatmeal Zappers
1/4 cup Greek yogurt (I used full fat Greek yogurt)
1/4 cup honey
1 tsp. Vanilla extract
2 eggs, beaten
1/2 cup banana purée
2 cups oatmeal
1/4 cup ground flaxseed
1 tsp. Cinnamon
1/2 tsp. Nutmeg
Dash of sea salt per preference
1/3 cup chocolate chips (of any kind- I also threw in white chocolate chips as well AND craisins- again, choose your own adventure)
1/4 cup walnuts or per preference
Mix the first three wet ingredients. Add one egg at a time and beat until smooth. Stir in banana puree and mix together.
Add the remaining dry ingredients and fold together until everything is combined.
I used a scooper and lined them up on a greased (or sprayed) cookie sheet. You can gently push them down a bit as they don't spread. Make them as big or small as you prefer.
Bake at 325 degrees for around 15 minutes but every oven is different and timing may vary depending on the size you make them, so just check and take them out when ready.
I love them warm but they freeze well and will go a much longer way if you take them out for the kiddos as you need before practices, play, or games. Ferner Fuel! :)
